- Fennel Seeds (Saunf) – 1 tbsp
- Cinnamon (Dalchini) – 6 inch
- Grated Nutmeg (Pisi Hui Jaayaphal) – 1
Except nutmeg blends all the above-mentioned ingredients in your mixer grinder and grinds till the whole thing turns into a powder. And for nutmeg grate, it separately to make powder.
Your chai masala recipe is ready. Keep it in an airtight container and store for nearly a month. While preparing tea to add ¼ tsp of this chai masala for every cup of kadak chai (strong tea).
Don’t prepare the chai masala in huge quantity as fresh-made masala boosts the aroma of your tea.
Chai Ka Masala

- Nutmeg (Jaayaphal) – ½
- Basil Seeds (Tulsi ka Beej) – 6
- Cinnamon (Dalchini) – 8 Grams
- Fennel Seeds (Saunf) – 10 Grams
- Cloves (Laung) – 20 Grams
- Black Pepper (Kaalee Mirch) – 20 Grams
- Dry Ginger (Sukhi Adrak) – 30 Grams
- Cardamom (Elaichi) – 40 Grams
Take a heavy-bottom saucepan and add cloves, cardamom, pepper, cinnamon, and fennel (quantity as mentioned above). Roast all these ingredients dry and keep the flame on ‘Low’. Once it turns scented keep on one side.
Take dry ginger and slice into small pieces. Now roast these small ginger pieces dry till it turns flavored. Keep it aside.
Now roast nutmeg and Basil seeds well. Let it cool and then pour all the ingredients into the grinder until it blends into a powder. Store in one airtight container and use ½ tsp of this chai masala recipe for 1 month.

In order to prepare this chai masala blend cloves, cinnamon, cardamom, and black peppercorns in a non-stick saucepan and roast dry up to 1 minute on medium flame (quantity as mentioned above).
Once you feel the aroma keep the roasted ingredients to a plate and let it cool for some time. Then pour these roasted ingredients into your mixer grinder and further add nutmeg powder and dried ginger powder together and blend till you get a coarse powder.
